Our industry is a passionate one, filled with incredible individuals that are willing to give every bit of themselves to their guests, co-workers, friends, and family; but the unfortunate reality of that fact is that we often empty our wells so dry that when it comes to caring for ourselves we find ourselves unable to do so. Our aim for the Focus On Health Podcast is to bring this fundamental issue in the hospitality community to the forefront of discussion. We hope to shed light on these issues in order to provide resources & support to those that hope to make life-long careers out of working in this field.

Valentino Longo was born in Rome and lived there until he was 23. He started his career in hospitality at Hotel De Russie led by Massimo D`Addezio. At that time the “De Russie” was the best hotel bar in Italy. He started as a barista, and then moved to a food runner and eventually made his way to being back in a bar. But, because he wanted to learn the English language, he decided to move to London with few of his colleagues in 2011.
London is the “Mecca” for bartending and bartenders. Valentino was fortunate to learn by doing and growing in a city that has had such an imprint on the bar culture and his passion for the industry. He ended up staying for three years!
After London, Valentino went to Rome for few years and the place that he was managing decided to open a second outpost in Miami. Valentino was chosen to come to Miami [in February 2016] to run, open and operate a cocktail bar. After a year, the restaurant group wanted me to go back to Rome. It was then that my path crossed with one of the executive managers of Four Seasons who told me about an exciting new project happening in Surfside. I got the job while the hotel was under construction and was able to travel to Japan for one month of intensive training at bars in Tokyo and Osaka, when I returned [in April 2017], it was the start of my journey and career at Le Sirenuse.
